Squid (can be fresh or frozen)
Pickling salt and pepper
Freshly squeezed lemon juice
PREPARATION AND COOKING TIME
Prep time: 20 minutes
Cooking time: approximately 2-3 minutes for the squid
1. If frozen, defrost squid thoroughly. Set the oven to “broil”. When you buy them you are buying tubes and tentacles that have been cleaned. Purchase fresh or frozen. Wash them well, thoroughly dry them and either place them in a food processor or chop them by hand into bite-size pieces or smaller. Saute them in butter for 3-5 minutes depending on the size. Voila!
2. Cut deep slits (not all the way through) into the body sac. This technique prevents squid from curling up on the hot grill.
3. Grill for about 1 minute, turning once.
When the squid are cooked, the slits open and resemble a rooster’s crest.
Garnish: Simply brush the squid with olive oil, salt/pepper and serve with wedges of fresh lemon.
SOME TIPS AND COMMENTS
Can be served with well-cooked rice if your digestion allows for it.
Based upon the amount grilled.
Serve hot and combine with a Carrot Salad and sauteed mushrooms. Enjoy with milk and/or a glass of fruit juice.
Fish tastes best when eaten fresh but can be stored in the fridge.
