Chocolate Ricotta Mousse

EQUIPMENT
Small pot or saucepan
Wooden spoon
Blender, handheld electric mixer or stand mixer
4-6 ramekins
INGREDIENTS
2 cups ricotta cheese
2 tsps pure cane sugar
½ cup/4 oz semisweet chocolate, melted
PREPARATION AND COOKING TIME
Prep time: 20 minutes. If you make homemade ricotta add 30-40 minutes.
Cooking time: 1 hour
METHOD
In a small pot or saucepan, melt chocolate slowly on low to medium heat carefully to prevent burning.
Thoroughly blend all ingredients.
Scoop mixture into individual ramekins.
Cover, refrigerate and chill.
SOME TIPS AND COMMENTS
You could also use powdered cocoa and a little extra cane sugar instead of the semisweet chocolate.
