Delicious Boiled Potatoes

EQUIPMENT
Medium saucepan
INGREDIENTS
Organic white potatoes
Butter
Ghee
PREPARATION AND COOKING TIME
Prep time: 10 minutes
Cooking time: 2-3 hours
METHOD
Peel potatoes if you like but peeling is optional.
Cover potatoes with water.
Cover pot and cook for 2-3 hours on low heat -- the longer the better. Do not boil or even simmer. You do not want to see movement in the water. You want the temperature to be just below boiling so the potatoes do not fall apart. The potatoes will be very tender.
When cooked, drain potatoes and keep the potato water. Let potatoes cool and then sauté them in butter and ghee.
Serve as is or you could add meat or fish and mushrooms or you could add them to homemade soups. You can mash them with butter or any variation thereof.
You can use the potato water in your soups along with the homemade broth or you can sip the potato water alone to help settle your stomach.
STORAGE SUGGESTION
Store in the fridge for 2-3 days.
